  • ¾ cup low-sodium chicken stock

  • 1 ½ Tbsp rice bran oil

  • 2 red bell peppers, diced

  • 4 whole limes, juiced & zested separately

  • 2 cups fresh green spinach (125g)

  • 4 cloves garlic, sliced

  • 2 tsp turmeric powder

Method

  1. Heat chicken stock until boiling.

  2. Place couscous in a bowl and pour the hot stock over it. Cover for 5 minutes.

  3. In a saucepan, sauté garlic, peppers, spinach in rice bran oil.

  4. Add cooked couscous, turmeric, lime juice, and half the zest. Toss well.

  5. Serve and top with remaining lime zest.

  6. Add grilled prawns or pine nuts for extra protein.
