
Salmon with Melon Salsa

Ingredients
For the salmon:

4 salmon fillets (frozen or fresh)

1 tbsp olive oil

Pinch of salt and pepper
For the melon salsa:

1 cup rock melon (cut into small cubes, about 0.5 cm)

½ red pepper (cut into small cubes, about 0.5 cm)

1 onion, finely chopped

1 tbsp fresh coriander, chopped

Pinch of salt and pepper

Juice and zest of 1 lime

1 tbsp olive oil
Instructions

Preheat oven to 200°C.

Line an oven tray with aluminum foil.

Place salmon fillets on the tray and brush with olive oil. Sprinkle lightly with salt and pepper.

Bake in oven for 5–10 minutes, or until browned on top and cooked through.

While the salmon is cooking, prepare the salsa: In a bowl, gently mix the rock melon, red pepper, onion, and coriander. Season with a little salt and pepper. In a small bowl, whisk together olive oil, lime zest, and lime juice.

Pour the lime dressing over the salsa and toss to combine.

To serve: Place one salmon fillet on each plate and spoon one-quarter of the salsa on top. Serve with green salad and brown rice.
