
Fish Maw Tornado Fried Rice
Serves 4 pax
Ingredients

3 Tbsp peanut oil

1 onion, medium & chopped
-
1 ¼ Rice Cup (160g) New Moon SupeRice, raw
-
250g mixed vegetables, frozen
-
100g chicken breast, boiled & shredded
-
310ml water
-
4 eggs, large
-
1 Can (400g) New Moon Superior Fishmaw Soup
-
Chinese vinegar (optional)
-
Pepper (optional)
Method
-
In a rice cooker, heat up 1 Tbsp of oil and fry onion until fragrant.

Add in rice, mixed vegetables, chicken breast and water. Press the “Cook” button on the rice cooker.

Once cooked, fill half of the rice into a bowl and place it in a moderately deep dish. Repeat this step with the remaining rice.

Whisk 2 eggs each in 2 separate bowls.

In a heated pan, add 1 Tbsp of oil and brush the oil on the edge of the pan.

When the pan gets to medium hot, pour the egg mixture in and let it set for a few seconds.

Once the edge of the eggs turns white, grab and turn gently with 2 chopsticks. Once the inner circle is formed, use the resistance in the cooked eggs to turn more rounds, forming a tornado design.

Place the cooked egg over the rice and pour half of the fishmaw soup around the egg.

Repeat steps 5–8 with the remaining rice and serve hot.
