  • 2kg turkey crown (on the bone)

  • 3 oranges (1 cut into wedges, ½ sliced, 1½ juiced)

  • 1 tbsp honey, plus extra for drizzling

  • 500g carrots, peeled and cut into long batons

  • 500g parsnips, peeled and cut into long batons

  • 1 tsp soy sauce

  • Black pepper

  • 2 bay leaves

Method for This Easy Christmas Turkey Recipe

  1. Remove the turkey crown from the fridge 1–2 hours before cooking. Preheat oven to 200°C.

  2. Cut four slices from one orange and juice the rest with another. Mix the juice with honey, soy sauce, and pepper.

  3. Loosen the turkey skin. Place orange slices and bay leaves underneath, spoon in some juice mixture, and smooth the skin back.

  4. Place orange wedges, carrots, and parsnips in a roasting tin. Add the turkey, drizzle with one-third of the juice mix, and roast for 30 minutes.

  5. Stir vegetables, drizzle another third of the juice mix, and continue roasting for 1 hour 30 minutes. Cover with foil if browning too quickly.

  6. Remove the turkey, cover with foil, and increase oven to 220°C. Toss vegetables with honey and roast 25–30 minutes until caramelised.

  7. Serve the Healthy Roast Turkey Crown surrounded by glazed vegetables. Remove the sticky skin before carving.
