Ingredients

  • 1½ cups all-purpose flour

  • ½ cup brown sugar

  • ½ tsp baking powder

  • ½ tsp baking soda

  • ¼ tsp salt

  • ⅓ cup Rice Bran Oil

  • 1½ cups mashed banana

  • 2 large eggs

Method

  1. Preheat oven to 160°C. Lightly grease a loaf tin.

  2. Stir together flour, brown sugar, baking powder, baking soda, and salt in a mixing bowl until well mixed.

  3. Make a well in the flour mixture and mix in the rice bran oil, mashed bananas, and eggs until just combined.

  4. Pour the batter into the loaf tin.

  5. Bake until a toothpick inserted in the center comes out clean (about 60 minutes).
