60g barbecued roast pork (char siew), cut into 1cm cubes

100g pork, cut into 1cm cubes

1 slice ham, cut into 1cm squares

1 medium-sized onion, peeled and diced

1 egg, lightly beaten with 1 tbsp oil (for egg wash)

80g prawns, shelled and cut into 1cm cubes

6 sheets shortcrust pastry (24cm × 24cm), store-bought

3 Chinese dried mushrooms, soaked in hot water and diced into 1cm cubes

A pinch of ground pepper
Method

Prepare the filling:
Heat oil in a medium saucepan over medium heat. Sauté onions until aromatic (about 30 seconds). Add pork, mushrooms, char siew, prawns, and ham. Cook for another 30 seconds. Season with salt, sugar, soy sauces, sesame oil, and pepper. Add cornflour, mix well, then set aside to cool. -
Prepare the pastry:
Preheat oven to 180°C for 10–15 minutes. Lay out a sheet of shortcrust pastry. Place a bowl measuring about 12cm in diameter upside down on the pastry. Cut out rounds until you have 24 pieces. Set aside. -
Assemble:
Press each pastry round into a muffin cup. Sprinkle with sesame seeds and spoon in 1 tbsp of filling. Crimp the edges to create a wavy design. Brush with egg wash and sprinkle more sesame seeds on top. -
Bake:
Bake for 40 minutes or until golden brown. Allow pies to cool for 10 minutes. Gently remove from muffin cups and serve warm.
