  • 1 tablespoon unsalted butter

  • 2 tablespoons olive oil

  • 4 boneless, skinless chicken breast halves (about 800g)

  • ¼ teaspoon sea salt

  • ¼ teaspoon freshly ground black pepper

  • ⅓ cup chopped onion

  • 2 garlic cloves, minced

  • 1 cup brown button mushrooms, sliced

  • ¼ cup balsamic vinegar

  • 1 teaspoon freshly chopped thyme

  • 1 tablespoon freshly chopped chives

How to Cook Chicken with Mushrooms and Thyme

  1. Preheat the oven to 180°C.

  2. Heat butter and olive oil in a skillet over high heat. Add chicken breasts, season with salt and pepper, and sauté for 3 minutes per side until golden brown.

  3. Transfer the chicken to an oven-safe dish and bake for about 25 minutes, or until juices run clear. Remove and keep warm.

  4. In the same pan, add onion, garlic, and mushrooms to the drippings and cook for 1 minute over high heat.

  5. Stir in balsamic vinegar and thyme, cooking for another minute.

  6. Add ½ cup of water and cook until the liquid reduces by half. Adjust seasoning to taste.

  7. Slice each chicken breast crosswise, coat with the mushroom sauce, and garnish with fresh chives.
