Ingredients

  • 2 tbsp extra-virgin olive oil, divided

  • ½ cup panko breadcrumbs

  • 1 tbsp + 1 tsp minced garlic, divided

  • 450g boneless, skinless chicken breast, diced

  • 1 tsp Italian seasoning

  • ½ tsp salt

  • 3 cups chicken broth

  • 1½ cups crushed tomatoes

  • 230g penne

  • ½ cup shredded mozzarella cheese

  • ½ cup shredded Parmesan cheese

  • ¼ cup chopped fresh basil

Method

  1. Heat 1 tbsp oil in a large oven-proof skillet. Add panko and 1 tsp garlic; cook until golden, 1–2 minutes. Remove and set aside.

  2. Wipe the pan. Add remaining oil; sauté chicken, Italian seasoning, salt and garlic.

  3. Add broth, tomatoes and penne. Bring to a boil; reduce heat and cook 15–20 minutes until sauce thickens and pasta softens.

  4. Preheat oven to high broil. Sprinkle mozzarella over pasta; broil 1 minute until bubbly.

  5. Top with toasted panko, Parmesan, and basil. Serve hot.
